The black summer truffle or Scorzone (Tuber Aestivum Vitt), is very similar to the precious black truffle, and sometimes can reach considerable dimensions. It has an intense aromatic odor. The collection period usually occurs between May and December.

Product life: 1 to 2 weeks, kept into a refrigerator at 37.5 F (3 C), wrapped in paper towel.
Do not clean the truffle until you are ready to use it.
To clean it, gently remove any dirt that remains with a soft brush.
